13: Wayne Addresses Our First Brew, Our Fruitless Tank Trip and Other Topics

Well, Haines City was a wash. They wanted to sell us a used tank for 15k that would have needed even more modifications in order for it to work for us. They quoted us on a secondary kettle at 23K which blew our minds. All this of course after walking around and looking at a sea of stainless and getting our hopes up and then on to the soul crushing realization that these guys were more expensive than the people actually making tanks for the brewing industry. We also found out that all their tanks were being fabricated in China anyway so unless we were getting a 15,000 dollar used tank we were still going to be paying high shipping costs regardless. A lesson learned.
 
We packaged the Stronger Scotch Ale today. It only yielded 6 gallons of product(we expected 10) so we bottled a total of 29 750ml bottles all with champagne corks and cages. Bob from St. Somewhere dropped by to look at the building and ended up lending a helping hand(thanks Bob). We tasted the still beer before adding priming sugar and new yeast and it was wonderful. The nose was cherry, light smoke and dark sweet toffee. The flavor profile starts out with cherry and a hint of smoke and then moves on to a dark toffee sweetness and then fades into a slight roasted character with hints of unsweetened blackstrap molasses and you are left with a decocted grainy flavor in the finish. We primed with dextrose and pitched American Ale II for our priming yeast. As we were filling the bottles, the beer in the bottling tube had a purple color. It is what we refer to as a Imperial Scotch Ale. There will be limited bottles of this available to volunteers and close friends so if you are interested in this very small batch limited beer email one of us and we will let you know when we will need assistance(most likely for bottling days but if you know a trade like plumbing, electrical or something along these lines then email us).
 
We will be bottling the Imperial Stout and the Double Nut Brown next week.
 
I am brewing 5 gallons of Guava Wheat on Friday. We are still trying to source out aseptic guava juice/puree so if you know of a source for this then email us.
 
On Thursday(May first) it is Joe's anniversary and my birthday so we are thinking of making a special one off for next year called One Anniversary and One Birthday or Birthday Anniversary Ale. Just joking but it could happen next year...maybe with a better name.
 
We are planning on meeting with J.J. Taylor next week and see if they are interested in distributing our product. Hopefully all will go well with this. I am confident they will be interested.
